Today, we’re harvesting elderberries. We are literally recording this as we pluck thousands of elderberries off of the stems.

All right.

What’s an elderberry?

An elderberry is a berry. It’s actually poisonous. It just hurts your belly.

But, um…

It does what? It hurts your belly?

Yes.

When does it hurt your belly?

If it’s green or red, it will definitely hurt your belly. You’re not supposed to eat it at all. If it is black, it will only hurt your belly if you eat it ripe off the bush.

You have to cook it. And what do you do? How do you cook it?

So you put it in a bowl with hot water.

Yeah, you can boil them and make a jam with honey and pectin. Pectin is the stuff that makes jam. It’s a gelatin.

And it’s often taken from natural products. But because we live in America, in 2024, we can get pectin in a packet, which is convenient. But we, why are we doing, what are we doing with our elderberries, currently?
