Shepherds Pie is one of those warm-up-your-insides dishes. It’s so easy to make, and the ingredients mesh together to unveil this homey goodness. Unfortunately traditional Shepherds Pie isn’t the healthiest thing around. When we started our clean eating lifestyle, husband made some adaptations so we could still enjoy it.
Step 1:
Boil or steam 3 large sweet potatoes until soft enough to mash. Put 1 cup of nut milk into the drained potatoes and mash. Add a teaspooon of salt, and pepper to taste into the now mashed potatoes and set aside.
Step 2:
Get the yummy goodness out of 7-8 avocados. Then mash until smooth. Doesn’t have to be perfect. It’s just the glue that will hold it all together and merry the flavors.
Step 3:
Brown 1-2 lbs of ground turkey. The amount depends on how much you like ground turkey. (You can’t really mess this recipe up.) By brown, I mean cook thoroughly. Make sure all the light pink spots disappear.
Step 4:
Heat up your frozen bag of mixed veggies. You can follow the microwave instructions if they are microwaveable or throw them in a pan until the ice is gone or “knock the frost off” is what Husband told me. Whatever that means, do that.
Step 5:
Mix the mashed avocados in with the cooked ground turkey. Mix the veggies in with avocado & turkey. Add a tablespoon of pepper. No salt yet.
Step 6:
Grease a deep casserole dish. Fill the whole dish with your avocado turkey veggie mixture, but make sure to leave some room at the top for… the mashed sweet potatoes. When everything is stacked accordingly, place it in the oven at 350 degrees for 30 minutes. Salt to taste when served and enjoy!
Not the prettiest thing to look at, but it sure tastes good. I’m not a dietician, but I consider this super food. The last time Husband made it, I dropped .5-1 lb a day after every day I ate it. This was in addition to exercise and my morning smoothie and a clean lunch. [ More about Clean Eating here ] But, regardless of weight-loss, it’s delicious, clean and so easy to make!
Ingredients
3 sweet potatoes
1 cup nut milk
1 teaspoon salt
1 teaspoon pepper
7-8 avocados
1-2 lb ground turkey (depends on how much meat you’d like in it)
12 oz frozen mixed veggies (can also go more or less on quantity here)
Tablespoon pepper
Salt to taste when ready to serve.
Im gonna totally have to give this a try! I think my kids would love it!
It’s so good they probably won’t even know it’s healthy!
I use mashed cauliflower and sweet potatoes for our version, but I haven’t had avocado in the main mix! What a great idea. Cheers!
